9 - Soft Ginger Cookies

Yes, I know 'Food & Drink' is the only category growing lately, but it's that time of year okay? Stay tuned, one can't keep cooking forever...or can they?


Soft Ginger Cookies(Tobi McCleod, Lethbridge, AB)
  • 1 1/2 c. butter
  • 2 c. sugar
  • 1/2 c. molasses
  • 2 eggs
  • 5 c. flour
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 2 tsp. ginger
    Combine wet & dry ingredients and mix well. Roll each 1" ball in sugar and flatten with fork. Bake at 375 for 8-10 minutes. Cookies will be soft when they come out so let cool on sheets. Store in airtight containers. Makes 2-3 dozen.

Let's just say that over half of these never made it into my Christmas tins!
